Simple Meringue Nests with Summer Fruits

  • lemon curd
  • caramel filling
  • thick custard
  • mixed berries
  • 1 mango, peeled and diced
  • 2 passion fruits
  • 1 banana, sliced
  • 1/2 cup toasted coconut flakes
  • 100g dark melting chocolate
  • icing sugar


  1. Pour lemon curd, caramel filling and thick custard into piping bags with a mid-sized star nozzle. Pipe filling into the meringue nests.
  2. Top lemon curd nests with mixed berries and dust with icing sugar.
  3. Top caramel nests with banana slices, toasted coconut flakes and drizzle with melted chocolate.
  4. Top thick custard nests with diced mango, passion fruit and half a strawberry.
